Ingredients:
Base:
1 cup medjool dates, pitted and soaked
3/4 cup oats
3/4 cup desiccated coconut
2 tablespoons coconut sugar
2 tsp vanilla essence
Top layer:
2 bananas
½ cup desiccated coconut
1/3 cup coconut oil, melted
1/4 cup maple syrup
Juice of 4 lemons
Method:
In a food processor add the base ingredients and blend together until the mixture has a sticky, paste like consistency. Press into the bottom of a square-baking pan and put in the fridge.
To make the top layer blend all the ingredients until smooth. Taste the mixture and add more lemon juice or maple syrup if needed. Spread the mixture on top of the base and sprinkle some more desiccated coconut over the top layer.
Place in the fridge overnight or until set.
